Vegan mac and cheese (no fake cheese!)

  • 1 cup cashews (approx)
  • 3 tbsp lemon juice
  • 3/4 cup water
  • Salt to taste (I use 1 tsp)
  • 1/2 tsp chili powder
  • 1 clove minced garlic
  • Squirt of dijon mustard (1/2tsp)
  • 1/4 cup nutritional yeast

Blend all ingredients in a blender and top fresh cooked, unrinsed pasta (so sauce will stick). I like shell pasta just cause it reminds me of childhood, but you can use any type of pasta. Serve with steamed broccoli and ketchup šŸ˜› Best fresh!
