Quick and easy sun-dried tomato pasta

  • 1 package rotini pasta
  • 1 jar sun-dried tomatoes packed in oil
  • 1 package frozen peas
  • 1 can chickpeas

Cook the pasta according to the box. Chop the sun-dried tomatoes if you like, I’m cool with the big chunks haha. Steam 1/2-the whole package of the frozen peas, depending on how much veg you like. Drain and rinse the chickpeas. Combine everything in a bowl, top with nutritional yeast if desired! I know, super simple, but super delicious! We used to make a very similar dish chicken, cauliflower, and parmesan cheese when I was a kid, so feel free to sub the peas for steamed cauliflower or to add some daiya cheese for that gooey cheese effect 🙂
