A great trail food! We used to have to on the last day of an out-trip with camp-not an everyday breakfast, but a great boost of fuel for your last push hike back into civilization. This is enough for 1 person I would think, make sure to drink lots of water with it since the oats will expand in your stomach.
- 2 tbsp brown sugar
- 2 tbsp vegan margarine
- 1/2 cup oats (quick oats or rolled oats blended a bit are best)
- mini chocolate chips
- shredded coconut
Melt the brown sugar and margarine together until sugar granules are dissolved. Don’t cook it too long or you’ll make hard/sticky caramel. Add the oats and they will soak up all the yummy (not so good for you) sauce. Garnish with chocolate chips and coconut (or whatever toppings you desire) and the chocolate chips should melt with the heat. A nice warm start to the day compared to packaged granola 🙂
