Chewy Vegan Brownies

Recipe:

1 and 3/4 cups cups flour

1/4 tsp baking soda

3/4 tsp salt

2tbsp flax and 3 tbsp water (mixed together and set aside)

3/4 cup choc chips

6 tbsp vegan butter

1/4 cup water

1.5 cups sugar

1/2 cup cocoa

2tsp vanilla

1/4 cup choc chips

1/2 cup or 1 pkg chopped walnuts

Preheat oven to 350F. In a small bowl, combine flax and water and set aside.Sift flour, baking soda and salt together in a large bowl. Combine choc chips, butter and water in a medium bowl and microwave for 30 seconds at a time to melt (usually no more than 2 mins total). Add sugar, cocoa and vanilla to the melted chocolate mix. Combine wet with dry then stir in extra chocolate chips and walnuts. Press into a parchment lined 8×8 pan and bake for 25-30 mins.

These brownies are the perfect mix of chewy and rich yet not too greasy.
